West Indian Shrimp
1 1/2 pounds cooked cleaned shrimp (or 2 packages frozen)
2 T olive oil
1 T Angostura Bitters
1 tsp chervil
1/2 tsp marjoram (or oregano)
1/2 tsp thyme
1/2 tsp cumin (powdered)
1/4 tsp saffron, soaked in 1 tablespoon warm water
Grated cheese
Place frozen cleaned shrimp in boiling water, bring again to the boil and simmer briskly for 15 minutes. Meanwhile heat your broiling oven. Drain shrimp and saute quickly in olive oil. Sprinkle with the bitters during cooking. Remove to a shallow casserole, and sprinkle the shrimps with the herbs and saffron. Top with a generous sprinkle of grated Parmesan, and broil until lightly browned (about 5 minutes). Serve with steamed rice.
